Baked potatoes

Put the oven on to gas mark 6 (200°C/400°F) so it can heat up. Choose potatoes of about the same size so they need the same cooking time. Wash the potatoes and prick them all over with a knife or fork.

Bake in the oven (put them directly on the oven shelf) for about 1 hour, or in the microwave for 10-15 minutes. Test with a knife or fork to see when the potatoes are cooked; they should feel soft inside.

Split the potatoes open with a knife and add a topping of your choice.

  • Baked potatoes can be served with a topping and a side salad or vegetables to make a balanced meal
  • Choose from the following toppings:
    • baked beans (reduced sugar and salt) and grated cheese
    • bolognese sauce
    • chilli con carne
    • cottage cheese with pineapple chunks
    • cream cheese mixed with mashed smoked mackerel fillet (remember to remove bones)
    • tinned tuna and sweet corn
  • Sweet potatoes can be baked in the same way. They tend to drip, so bake them on a tray in the oven; they take a little less time to cook
  • Serve as potato wedges: wash the potatoes, cut in half and slice each half into wedges. (1 medium potato makes about 8 wedges.) Put onto a lightly greased baking tray and bake in a pre-heated oven at gas mark 6 (200°C/400°F) for 30 minutes. Serve with a family meal. These are easy to make and are much healthier than fried or oven chips
