Let's make Cheesy Bean Quesadillas

4 tortilla wraps

1 tin mixed beans

½  tin sweetcorn

1 bell pepper

120g grated cheese

1 avocado 

4 tbsp natural yoghurt (optional)

Cheesy Bean Quesadilla

Rinse and empty beans into a bowl, heat as recommended. Wash, deseed and finely chop the pepper. Grate cheese.

Add in the sweetcorn and pepper to the beans and lightly mash together.

Heat a large frying pan on medium-high heat, place a tortilla in the pan and spread the bean mixture on one half of the wrap along with grated cheese.

Fold over the other side of the wrap to form a semi-circle and flip to brown the opposite side.

Mash the avocado in a separate bowl and serve as a guacamole dipping sauce or as finger food along with natural yoghurt.

Serving suggestions
  • These quantities will make enough for 4 adults.
  • Chop into small trips for young children and serve with guacamole, natural yoghurt and/or tomato salsa for a fun dipping experience.
  • You could add any vegetables you like to the quesadillas, you could even add cooked chicken or egg next time.
Top tips
  • Leftovers can be stored in the fridge until the next day.
  • If you have a little extra time, adding in some seasoning such as paprika and garlic could make these extra delicious!
